Lemon Vinaigrette
A fresh tasting citrus vinaigrette that is easy to make and goes well with many dishes!

- ½ cup Fresh Lemon Juice
- 1 tsp Chopped Fresh Thyme
- 1 tsp Chopped Fresh Oregano
- 1 Tbsp Dijon Mustard
- ½ tsp Minced Garlic (optional)
- 1½ cups Olive Oil
In a food processor or blender, combine the lemon juice, thyme, oregano, garlic, and mustard. Turn on and with the motor running, add the olive oil in a slow, steady stream to emulsify the dressing. Taste and adjust seasoning.
Transfer the vinaigrette to a container with a tight-fitting lid and refrigerate for at least 30 minutes to let the flavors blend. Shake well before serving.
