Equipment

  • 1 blender or food processor

Ingredients

  • 2 cups Heavy Cream
  • 1/2 cup Fresh Basil, chopped
  • 1/4 cup Fresh Chives, chopped
  • 1 1/2 tsp Lemon Zest, finely grated
  • 2 tbsp Fresh Lemon Juice

Instructions

  • Puree the heavy cream, basil, chives, lemon zest and juice, garlic and red pepper flakes together using a blender, food processor, or immersion blender until thick and creamy, about 15 to 20 seconds. Do not overmix or it will separate, and you will have grainy fresh churned butter.
  • Add the grated Parmesan / Romano cheese and then season to taste with the salt and pepper.
  • Use immediately or cover and refrigerated until needed. The sauce can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for even longer.
